Ridge Gourd | బీర కాయ
Ridge Gourd (బీర కాయ) is a cylindrical, green gourd that can be eaten raw or cooked. It has a thick, tough skin and white flesh that is typically sweet and a little crunchy. The ridge gourd is harvested when it is small and immature, when it is around four to six inches long. It can be eaten raw, but can also be used in curries, soups, or as a salad ingredient.
